Clam Penne Pasta in Tomato Sauce

Ini pasta adalah favorit saya sejak dahulu kala, di sebuah restoran yang kini sudah tidak eksis lagi. Sedih.

Walhasil sekarang jadi lebih sering bikin sendiri dan aslinya ga saya takar nih tapi dikira-kira aja, ditabur bubuk cabe dikit biar nendang. Asam, segar dengan aroma khas dari tomat berpadu oregano dan bay leaves. Kemudian jadi favorit orang rumah hehehe.

Clam Penne Pasta in Tomato Sauce

Ingredients
150g penne pasta, rebus dalam air garam sesuai petunjuk
4 buah tomat merah, rebus, tiriskan, buang kulit dan biji, cincang
75g aneka seafood (saya adanya kerang kupas), rendam dalam perasan jus jeruk nipis
2sdm pasta tomat
2sdm saus tomat botolan
½sdm oregano kering siap pakai
60-100ml air kaldu
2 siung bawang putih cincang
2 sdm bombay cincang
daun bay
garam
gula
merica
jus jeruk nipis
extra virgin olive oil untuk menumis

Directions
Tumis bawang bombay dan putih sampai harum.
Masukkan tomat, semua saus dan bumbu, seafood, lalu beri air, cicipi dan masukkan jus jeruk nipis bila perlu.
Masukkan pasta rebus lalu aduk sampai rata.
Hidangkan dengan daun basil segar dan taburan keju parmesan.

Fresh Tomato Soup

Another soup we like using fresh tomato and Ladang Lima’s non gluten flour. Yummy!

Fresh Tomato Soup

Ingredients
4 pcs chopped fresh tomatoes
1 onion
4 whole cloves, my alternate below.
2 cups chicken broth, i’m using water
2 tablespoons butter
2 tablespoons Ladang Lima all-purpose flour
1 teaspoon salt
2 teaspoons white sugar, or to taste

Alternate:
added 2 bay leaves, 4 cloves crushed garlic, 1 tsp Bon Cabe (optional), 1/2 cup milk, 1 Tbsp oregano, 1 tsp thyme, pepper to taste. Delicious!

Directions
In a stockpot, over medium heat, combine the tomatoes, onion, spices and water. Bring to a boil, and gently boil for about 20 minutes to blend all of the flavors. Remove from heat and run the mixture through a food mill into a large bowl, or pan. Discard any stuff left over in the food mill.

In the now empty stockpot, melt the butter over medium heat. Stir in the flour to make a roux, cooking until the roux is a medium brown. Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest. Season with sugar and salt, and adjust to taste.
