This cookie is made without any egg with a mix of flour and rice flour. Very unique which I dare to conquere the recipe.
But….
I found a hard time to shape this cookie dough because it was so dry without an egg and apparently the dough was not baked enough time, it felt raaaare! But I would love to make another one, some other time hehehe.
I’m trying this recipe during last Idul Fitri feasts. Crunchy and cheesy enough for me with a slight spicyness taste.

Savoury Bites: Egg-less Rice Flour Cheese Cookies

40 pcs
1 cup grated Cheddar
125 g butter
1 cup rice flour
1 cup plain flour, sifted
1/4 salt
1/2 tsp Tabasco sauce
Combine all ingredients to make a dough. Roll dough into small balls, flatten with fork and place on baking trays. Allow room for spreading. Bake at 180c for 10-15 minute until lightly brown.
My tip: use low heat and increase baking time to make sure the dough is baked enough.
